Watermelon “gelo” – Gelo di anguria

Ingredients for 4 servings

  • 4 cup of watermelon juice
  • 3 1/2 oz of starch
  • 7 oz of caster sugar
  • 2 oz of cubed candied fruit
  • 3 1/2 oz of bitter chocolate
  • 1/2 sachet of vanillin
  • cinnamon
  • jasmine flowers
  • pistachios


Melt the starch in the melon juice, add the sugar and let it thicken stirring on a low flame. Boil for 2 minutes and cool down. Add the chopped chocolate, the candied fruit, and the vanillin, pour all in a wet mould and leave it in the fridge for 1 day. Turn the mould upside down on a dish and sprinkle with minced pistachios, cinnamon and jasmine flowers.
