"sfince" - Sfince di Natale |

Ingredients
for 8 persons
2 lbs of flour,
1 lbs of boiled and mashed potatoes,
5 tbsp of Marsala,
1 sachet of vanillin,
1 of brewer's yeast,
1/2 orange,
2 teaspoons of anisseds,
milk,
water,
vegetable oil,
caster, sugar,
cinnamon,
salt. |

Preparation
Pour the flour in a bowl with the mashed potatoes, the yeast
melted in 1 cup of milk, the Marsala wine, the vanillin,
some salt,
some grated orange peel, and the aniseeds. Add
the necessary water to obtain a very soft pastry. Knead till
the pastry is ropy and
cover. Let leaven for about 1 hour.
From little doughnuts and fry them in deep hot oil, sprinkle
with sugar and cinnamon.

Ingredients
for 8-10 servings
1 lbs of flour,
7 oz of caster sugar,
8 oz of margarine,
4 yolks,
1 pinch of vanillin,
milk,
salt.
For the filling
1 lbs of dried figs,
1/2 orange,
3 1/2 oz of peeled almonds,
2 oz of caster sugar,
cinnamon,
1 tbsp of bitter cocoa,
1 tbsp of honey,
coloured sugar decoration,
butter,
icing sugar. |

|
They are
typical Christmas biscuit, made all around Sicily with some
varation in the shape and it the trimmings.
Preparation
Mix the flour with the sugar, the chopped margarine, the
vanillin, some salt, the eggs, and some spoon of milk, knead
all till
obtaining a soft and elastic pastry, wrap it
in the plastic wrap and keep in the fridge for 30 minutes at
least.
Put the figs in a food
processor and add the orange peel,
the sugar, 1 pinch of cinnamon, the cocoa, the almonds and
the honey then mix all together.
Put the mixed pastry in
saucepan add 2-3 tbsp of water and cook for a few minutes,
to obtain a homogenous dough. Roll out the
dough and cut
some squares of it with a 6 cm side.
At the center of each square put a spoon of the filling,
roll the dough up and
seal the open sides. Bend each roll
to form an arch and make on them 2-3 cuts. Then put them
in a buttered baking-pan and
sprinkle coloured sugar decoration
on them. Bake for 20-25 minutes and serve cold, sprinkled
with icing sugar.

Ingredients
for 8 servings
1/2 cup of milk,
3 1/2 oz of starch,
7 oz of caster sugar,
cinnamon,
2 oz of bitter chocolate, 3 1/2 oz of toasted almonds. |

Preparation
Melt the starch in a little cold milk; then add the sugar
and the remaining milk, make it thicken stirring on a low
flame. Pour on a
dish and put in the fridge. Once cold, sprinkle
with the cinnamon, the chopped chocolate and the minced almonds.

Ingredients
for 8 persons
2 lbs of wheat,
cooked wine,
sugar. |

|
|
|
|
It is the typical dish of the day of S. Lucy, usually eaten
for breakfast. The dish can be flavoured in many ways: adding
ricotta and
cinnamon or chopped chocolate, milk and chocolate,
classic cream or chocolate cream, coffee and sugar.
Preparation
Mix the ricotta with the sugar, the vanillin, the beaten
eggs, some salt and cinnamon.
Add chocolate in chips and pour all in a
buttered and floured
baking-pan.
Bake at 200° for 45 min, after take out from the oven and
let it cool down.Once cold, sprinkle with
icing sugar.

Watermelon

Ingredients
for 4 servings
4 cup of watermelon juice,
3 1/2 oz of starch,
7 oz of caster sugar,
2 oz of cubed candied fruit,
3 1/2 oz of bitter chocolate,
1/2 sachet of vanillin,
cinnamon,
jasmine flowers,
pistachios. |

Preparation
Melt the starch in the melon juice, add the sugar and let
it thicken stirring on a low flame.
Boil for 2 minutes and cool down. Add the
chopped chocolate,
the candied fruit, and the vanillin, pour all in a wet mould
and leave it in the fridge for 1 day. Turn the mould
upside
down on a dish and sprinkle with minced pistachios, cinnamon
and jasmine flowers.

Coffee water-ice - Granita

Ingredients for

7 oz of caster sugar,
1 cup of strong coffee,
whipped cream. |

|
|
|
|
Water-ice with brioches is the typical summer breakfast of Sicilians.
Preparation
Prepare the syrup melting the sugar in 2 cups of water and
let it simmer for a couple of minutes, then switch off the
flame, let it cool down and add the coffee. Put the mix in
an aluminium container, put it in the freezer and stir frequently
to leave it grainy. Serve whipped cream, if desired.

8 lemons,
10 1/2 oz of caster sugar. |

Prepare the syrup melting the sugar in 2 cups of water and
let it simmer for a couple of minutes. Let it cool down and
add the lemon
juice. Put the mix in a container and leave
it in the freezer for a few hours stirring now and then,
removing the ice from the rims of
the container.
